Do you have a fuel pressure port in engine? If you do ,buy a fuel pressure gauge and rig it so you can watch it in the cab while you are driving it. Leave it in there till one if those days it acts up and you can watch the pressure.

Curiosity was killing me so I took it for a drive exactly the same place and this time, RAN FINE! WTF???? I took it for a long ride after that and it's running normal. (normal for this thing) :D

I checked the EGR valve and it's not even connected! The oxygen sensor is there and appears to be hooked up. The only thing I noticed was it's missing the pre-heat hose from ex manifold to air box. Probably wasn't ever there since I bought it, never noticed it missing before. Guess I'll put one on to occupy myself... :D

I should really keep searching for a CJ myself. I wanted an older Jeep but they are so hard to find and very expensive when you do. (or completely rotted out!) The YJ series has too many obstacles with just dropping a V8 in.
