On the 327, I installed a pcv55 hose that connects to the Carter carb base. Question, do I need a breather cap on one or both of the valve covers?

No - breathers not needed on valve covers with PVC hooked to back of carb and if you have a vented oil fill cap on the oil fill tube. I have 3 of these type of factory breather setups on my 62’s.
no need to cut holes in factory 327 valve covers 62-64 for sure

If your intake is an early one that has the PCV into the back it really doesn't matter if the breather cap is on a valve cover or the oil fill tube,if your valve covers are the later type with the PCV going into it you're best off putting the breather cap on the opposite valve cover to get more complete cross flow crankcase ventilation.

PCV is in the back where the draft tube went.
Wife wanted a little chrome and asked if I'd swap the OG air cleaner and valve covers. Each cover has breather cap so I guess more lets the engine breather better.
