i just got a new set of stainless valves from showcars....my question is, can i just install them, or do i have to bring the heads to a shop to grind and seat them???

Dont chance it take the heads to a shop and have the seats machined, cut is the best IMO but seats have been ground for almost a 100 years, and work fine also as long as the grinding equipment is in good shape.

mullti angle valve seat cut

Modern single cut-multi angle on the valve seat will increase air flow. I would pass on a stone ground valve seat, It's from the dark ages. (Although it still works).
