Carburetor for 409

I currently have installed a 600 Edelbrock carb on my 409 engine (340 hp) and I think it runs too lean.
What would be the better alternative?

I've had good luck with Edelbrock carbs. They make a Performance Series (manual choke) that is jetted a little richer than the carb that comes with an electric choke. And they are pretty easy to work on if you have the owners/tuners manual that comes with the carb. The only thing that is a little tricky is rejetting the carbs using metering rods/jets and knowing how much you've changed the jetting. But there is a chart in the manual that lays it all out for you.

The only real problem I've had with them, is that they are a little prone to flooding at idle with higher fuel pressure and sometimes I've had to run a pressure regulator with them.

The main alternative to Edelbrock is Holley. Good carbs, but a little more tempermental than Edelbrocks (just my opinion.
