Here is another chart that I had found somewhere and saved. Sometimes the tailshaft length is different.

If you want a direct bolt in and have no other modifications only the 6 inch tailshaft will work.,The 9 and 12 inch will require front drive shaft work.

Speaking of converters, how can one tell what the stall speed is? Are there numbers stamped on it?

Every convertor place has their own "code" on what they stamp and the same one will stall different on different motors and rear gears.

I still have 2 technical questions about the transmission. Forward shift pattern or reverse? Automatic / manual valve body or manual valve body? with the first I would have to guess, with the second automatic / manual i think is the better choice , that's like ex work , or ?

Normal [forward] pattern,auto/manual pattern would be my choice.Reverse pattern will also be a manual pattern which means you have to shift iy.Not for a cruiser.

Auto/manual is a good way to go. I have a full manual and sometimes I forget after driving a stock auto all the time
